Bejeweled 2 -- works on multiple devices, you can play it in a spare 10 minutes, it's simple to learn yet incredible addictive.

Can I be really really obvious and say Tetris? It's on my phone, my DS, the original game boy and can be played for a couple of minutes (40 lines mode) or 2 hours... or until your battery dies.

I'm having fun with Spore Origins on my iPhone. My favorites tend to come and go, but that's it for now.
